Kasay / Kasaya / Konkani Tea

We had been on a yoga retreat during thanksgiving and were discussing about kasaya being an alternative for tea or coffee. Kasaya(pronounced as Kah-sha-yah) was a regular feature at my grand parents home when I was growing up. Konkanis have this as a substitute to tea or coffee during breakfast or evening snacks. Both I and my sister loved kasaya always had it for morning breakfast and evening snacks. As we grew up we indulged in Boost, Complan, Bournvita and other powders but never got addicted to tea or coffee.
Coriander gives a boost to the digestive system and helps to cure indigestion, flatulence and gas. It is cooling by nature and cools down the acidity caused by overeating rich foods. It helps to stimulate lost hunger and helps to cure ulcers and stomach sores. Cumin seeds are rich in iron and help to cure digestive disorders. Fennel seeds are good to cure any digestive disorders and it is common tradition in India to have a pinch of fennel seeds after every meal. Kasaya is great to keep cough and cold away during the cold winters. Kasaya can be prepared with 1 part milk or 1/2 part milk and part 1/2 water. If you are a vegan it can be prepared just with water. 


Ingredients for Kasaya powder:
1 cup coriander seeds
1/2 cup fennel seeds
1/2 cup cumin seeds


Method 
Roast the seeds in a pan on low heat till they are crisp. Take care not to burn them. They can also be toasted in the oven. Completely cool the roasted seeds and grind them into a fine powder. I use a coffee grinder to grind my spices. Store in an air tight container. This powder stays good for 1-2 months but refrigeration can extend its life by another 2-3 months. But it is always good to prepare it on monthly basis to retain the original flavor of the spices. 

To prepare 1 cup Kasaya: 

Ingredients:
1 tablespoon of kasaya powder
1/2 cup milk
1/2 cup water
1 teaspoon sugar or any other sweetener

Method:
Put the water in a vessel and add the kasaya powder to it. Get it to a boil and add milk. Give it a stir or two and remove from heat. Keep the vessel covered for 3-4 minutes to let the flavor of the spices steep  into the kasaya. Strain the kasaya with a tea strainer. Add sugar as per taste and serve hot.

Mint Drink

Who doesn't like the cool flavor of mint and lemon? Here is a great recipe combining two yummy flavors. This is also great drink for getting rid of the pitta dosha or heat effects generated in the body. Its a great remedy for indigestion and stomach upsets. Other than that you can enjoy it with a dash of soda and ice cubes in summer.

Ingredients
15-20 mint leaves
1 tablespoon sugar
4 -5 tablespoon lemon juice
1 cup water
ice cubes

Method
Grind the mint leaves into a fine paste with water. Strain the mint juice to separate the fiber and stalks. Add lemon juice and sugar to the strained juice. Add ice cubes and serve immediately.

Pepper Rasam



Pepper rasam is a great comfort food to have on cold wintery days. It is a great home remedy for colds, fevers and sore throat. Here is the recipe.

Ingredients
1 tablespoon rasam powder
4-5 tablespoon chopped coriander leaves
2 tablespoon cooked toor dal (for better consistency)
1 medium tomato chopped
1/4 teaspoon tamarind concentrate
1/4 teaspoon pepper powder or as desired
salt for taste

Method
Combine the chopped tomato, toor dal, rasam powder, pepper powder and tamarind. Add 3 cups of water and get the rasam to a boil. Add coriander leaves and salt for taste. Cook for 3-4 minutes. Serve hot.

Carrot Milkshake

Carrot Milkshake is one of my favorite comfort foods. It is low calorie drink and makes a great late morning/afternoon drink when my hunger pangs are at their peak :) The cardamom imparts a wonderful flavor to this drink and it gives the milkshake a distinctive flavor of Gajar Halwa; of course without the guilt of consuming many hundreds of calories. I usually use reduced fat or fat free milk for this milkshake, but whole milk can also be used. This milkshake is a great treat for children who are fussy about drinking milk. Ingredients
1 carrot
1 cup milk (cold or warm as desired)
3-4 cardamom pods
2 almonds soaked in water for 5-6 hours (optional)
1 tablespoon cream (optional/ if you want a richer taste)
1/2 teaspoon honey or 1 teaspoon sugar or as per taste

Method
Trim the ends of the carrot and peel it. Chop it roughly into 4-5 pieces and boil it in very little water till the carrot is soft. I sometimes cook it in the microwave for around 3-4 minutes in 3-4 tablespoon water. Peel the cardamom pods to separate the seeds. Put all the ingredients in the blender and blend well. Serve immediately.

Preparation time: 10 minutes
Serves: 1

Green Gram Drink




This is one of my late Grandmom's (Mom's mom) health drink. She would give this drink to anyone who had stomach problems. This is a great drink to mitigate all the digestion related problems especially for acidity. Maximum benefits can be reaped if this drink is had early in the morning on an empty stomach. Consuming moong also imparts a healthy glow to the skin and hair due to the various vitamins and minerals present in the moong gram. This drink is very easy to prepare and here is the recipe.

Ingredients
1/2 cup whole moong
3-4 pods of cardamom
1-2 tablespoon jaggery or gur (sugar if jaggery is not available) (optional)

Method

Soak moong overnight or for at least 6 hours. Grind into a fine paste with cardamom seeds, jaggery and water as per desired consistency. Do not strain. Drink it immediately after preparation.


Preparation time: 5 minutes excluding the soaking time
